What is the process of freeze-drying fruit?
Freeze-drying is a modern method of food preservation that allows you to preserve the full taste, aroma and nutritional value of fruit. This process consists of removing water by sublimation, i.e. the direct transition of ice to water vapor without a liquid phase. Thanks to this, the fruit retains its valuable properties, natural structure and almost unchanged appearance.
Freeze drying phase:
1️⃣ Freezing – the fruit is quickly frozen to a very low temperature (up to -50 °C), which stops biological processes and the decomposition of nutrients.
2️⃣ Sublimation (first drying) – in a vacuum, ice passes directly into a gaseous state, which allows up to 98-99% of water to be removed.
3️⃣ Further drying (second drying) – the last traces of moisture are removed, which ensures a long shelf life of the product without the need for preservatives.
