The velvety-footed mushroom is known by the Japanese name enokitake, abbreviated enoki. The Latin name is Flammulina velutipes. In India it is called futu, in China it is donggu.
This mushroom has been used in traditional Chinese medicine (TCM) for centuries.
It is valued primarily for its high amount of antioxidants and minerals.
It is rich in beta-carotene, B vitamins and ergosterol (D2 is produced by sunlight).
Enoki contains polysaccharides (proflamin, flammulin, beta-glucans), but also proteins, glycoproteins (lectin), sterols (mycosterol), lipids, phenols or sesquiterpenes. The minerals include magnesium, zinc, boron, manganese, copper, sodium and potassium. Among the vitamins, provitamin A, B vitamins and ergosterol (sunlight produces D2) stand out.
Although enoki was used for several centuries mainly in Asian countries (Japan, China or Korea), where it grew wild, it was also cultivated in England and France from the mid-18th century. Nowadays, it is grown all over the world and is popular not only as a tasty food, but also for the substances it contains. It is not for nothing that it was valued, like many other beneficial mushrooms, by the pharaohs of ancient Egypt.
Enoki was first scientifically described in 1782 by the English botanist William Curtis and mistakenly classified it in the genus Agaricae. The mushroom received its correct name in 1951, when the German mycologist Rolf Singer reclassified it and gave it the current name Flammulina velutipes.
The edible autumn and winter mushroom grows on dead wood of deciduous trees. It is characterized by a long leg and a wide cap. This is the appearance of wild enoki. Cultivated enoki is different - it has a very long white leg and a small white cap, which is due to the lack of light during cultivation. In nature, enoki grows in dense clumps on the stumps of Chinese aspen (enoki in Japanese), but also on other trees such as Japanese persimmon (it has kaki fruits). In the wild, it usually grows from September to March, which is why it is called a winter mushroom.
