Mushroom oyster mushroom (lat. Pleurotus ostreatus)
Oyster mushroom (Pleurotus ostreatus) is an edible mushroom with a smooth cap of gray, gray-violet or gray-brown color with whitish, transversely connected scales. The color depends on the growing conditions and air humidity. The mushroom grows in temperate and subtropical forests around the world in clumps on wood and stumps of deciduous trees from late summer to winter, and in mild winters often in spring. Oyster mushrooms can be found on living or dead trunks of deciduous trees, especially on beeches, willows, walnuts, birches, poplars or rowan trees from October to December.
As a wood-decaying fungus, oyster mushrooms can absorb many substances beneficial for the human body from wood, which are then well tolerated by the human body. The dry matter of the mushroom contains 50% carbohydrates, 25% proteins, 6-10% minerals, 1-2% fat. In addition to polysaccharides and beta-glucans, oyster mushrooms also contain a large amount of B vitamins, essential amino acids, and unsaturated fatty acids. Important substances from the group of polysaccharides and terpenes are the polysaccharide pleuran and the terpene pleurotin (which is an antibiotic and antithrombotic substance). Oyster mushrooms are also a source of natural statins, i.e. substances that lower blood fat levels.
Oyster mushroom – cultivation and research
The first experiments with oyster mushroom cultivation took place in 1917 in laboratory conditions (German scientist R. Falck). In the 1960s, research and cultivation experiments continued in Asian countries such as China, the Philippines and Thailand, and they are currently, together with the USA, the world's largest producers of oyster mushrooms. It is the third most important cultivated mushroom worldwide after champignons and shiitake mushrooms, with around 2.5 million tons of it being grown annually.
In Czechoslovakia, in 1964-1965, a team from the LIKO Research Institute in Bratislava, led by RNDr. A. Ginterová, CSc., was involved in oyster mushroom cultivation. In 1982, oyster mushroom cultivation boomed in Czechoslovakia.
Interestingly, oyster mushrooms are one of the few "carnivorous" mushrooms. Its mycelium can poison and kill organisms from the Nematodes group.
