Maitake is a mushroom rich in beta-glucans (mainly beta-(1,3)-D-glucan and beta-(1,6)-D-glucan), glycoproteins, antioxidants - vitamin C, but also vitamin B2 (riboflavin), B5 (pantothenic acid) and ergosterol (provitamin D), minerals such as potassium, magnesium and calcium. There is also the polysaccharide chitin, amino acids, phenols or flavonoids.

The Japanese name maitake translates as "dancing mushroom", which refers to the incredible joy that the searchers felt when they found this particular borage-like beneficial mushroom.

The delicious mushroom is native to Japan, where it is referred to as the queen of mushrooms and is the basis for the popular Japanese dish nabemono. During feudalism, it was exchanged in Japan for silver of the same weight. It also originally comes from China and North America. It is said to be found all over the world, requiring a temperature (5-37 °C) to grow. In addition to growing wild, maitake is also cultivated commercially. In China, the mushroom is called “Huishuhua”, in English it is called “hen-of-the-woods” and in Italy it is called “signorina”.

One of the earliest references to maitake comes from the traditional Chinese medicine work Shen Nong Ben Cao Jing, written in (206 BC – 220 AD).
After centuries of use in traditional Chinese medicine, maitake was discovered for the “Western” world by the Scottish mycologist James J. Dickson, who named it Boletus frondosus in 1785. The current name Grifola frondosa was given to the maitake mushroom in 1821.

Maitake is usually found on the lower parts of oaks, but it also grows on other deciduous trees – living or dead. The Czech name trsnatec phupenitý is derived from the shape of the mushroom. The gray stem and often a large number of fused gray to brownish caps grow in clusters. A cluster of fruiting bodies can reach up to 25 kilograms and a meter diameter.
