Kelp Thallus (Ascophyllum nodosum ) is a large leafy alga from the plant family Laminariales. It grows in groups of individual plants, sometimes referred to as underwater forests. Kelp is an ancient plant that may have appeared in the oceans between 5 and 23 million years ago. The word "kelp" was used until the 19th century to refer to the ash that is left after burning seaweed to produce soda (sodium bicarbonate). Alginate is a carbohydrate obtained from algae that is often used as a thickener in many food products, such as jelly and ice cream. It is also a substance used to make dental impressions.
Kelp thallus (leaves) are a very common part of many Asian dishes, including Japanese, Korean, and Chinese cuisine. Kelp is known to contain naturally occurring iodine*, which may support a healthy thyroid*, and contains many other nutrients, including vitamin K, magnesium, and vitamin B9 (folate)*.
